Ingredients:

  • 4 Sawyer Creek Cattle pastured pork chops (9 oz each)
  • 1 tsp fine sea salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp fresh rosemary, finely chopped
  • 4 cloves garlic, minced
  • ½ cup grass-fed butter, melted
  • 2 tbsp avocado oil

Tools:

  • Meat thermometer
  • Oven-safe skillet

Directions:

1.    Prepare the Chops: Thaw the pork chops and bring them to room temperature. Pat them dry with paper towels, then generously season both sides with sea salt and freshly ground black pepper.

2.    Preheat and Prepare the Butter: Preheat the oven to 375°F. In a small bowl, combine melted butter with the minced garlic and chopped rosemary.

3.    Sear the Chops: Heat avocado oil in an oven-safe skillet over medium-high heat. Sear the pork chops for about 3–4 minutes per side until golden brown.

4.    Bake the Chops: Brush most of the herb-garlic butter over the pork chops. Transfer the skillet to the oven and bake for about 5–6 minutes per side, or until the internal temperature reaches 145°F using a meat thermometer.

5.    Rest and Serve: Remove the chops from the skillet and let them rest for 10 minutes. Drizzle the remaining herb-garlic butter over the top before serving.
