Ingredients

For the beef & bacon:

  • 1 lb. Sawyer Creek grass-fed ground beef
  • 4 slices Sawyer Creek pasture-raised bacon, chopped
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp cumin
  • ¼ tsp cayenne pepper (optional for heat)
  • ½ cup water

For the nachos:

  • 1 bag organic tortilla chips
  • 1½ cups shredded smoked cheddar or gouda (or raw cheddar)
  • 1 cup black beans (optional, rinsed and drained)
  • 1 cup diced tomatoes
  • ½ cup diced red onion
  • 1 jalapeño, sliced
  • ¼ cup chopped fresh cilantro
  • 1 avocado, diced
  • ½ cup sour cream (or Greek yogurt for a lighter option)
  • Fresh lime wedges

For the bacon drizzle (optional but amazing!):

  • 1 tbsp raw honey
  • 2 tbsp crispy bacon bits

 Instructions

  • Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the pan.
  • Brown the beef: Add the grass-fed ground beef to the skillet and cook in the bacon fat until browned. Drain excess fat if needed.
  • Season the beef: Stir in sea salt, garlic powder, onion powder, smoked paprika, chili powder, cumin, and cayenne pepper. Add ½ cup water and let simmer for about 5 minutes until the liquid reduces.
  • Prepare the nachos: Preheat oven to 375°F. Spread tortilla chips on a large baking sheet.
  • Layer it up: Evenly distribute seasoned beef, crispy bacon crumbles, black beans (if using), and shredded cheese over the chips.
  • Bake: Place in the oven for 8-10 minutes or until the cheese is melted and bubbly.
  • Top it off: Remove from the oven and add diced tomatoes, red onion, jalapeño, avocado, and fresh cilantro.
  • Bacon drizzle (optional but next level!): Mix raw honey with crispy bacon bits and lightly drizzle over the nachos.
