Ingredients 

  • 1 tbsp coconut oil (or avocado oil)
  • 1 lb. grass-fed ground beef
  • 1 tbsp homemade taco seasoning (recipe below)
  • 1/2 cup fresh green chiles, finely chopped (such as Anaheim or poblano peppers)
  • 8 (8-inch) whole wheat tortillas or sprouted grain tortillas
  • 1 (16-ounce) can of refried beans, heated
  • 2 avocados, peeled, halved, seeded, and sliced
  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp chopped fresh cilantro leaves

 Homemade Taco Seasoning:

  •  1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Pinch of sea salt and black pepper

 Instructions

  •  Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Heat coconut oil in a medium skillet over medium-high heat. Add the grass-fed ground beef and cook until browned, about 3-5 minutes, breaking it up as it cooks. Drain any excess fat.
  • Stir in the homemade taco seasoning and fresh chopped green chiles, cooking for an additional 2-3 minutes until the chiles soften slightly. Set aside.
  • Spread refried beans on one tortilla, then top with the ground beef mixture, avocado slices, and shredded mozzarella cheese. Place another tortilla on top to create a quesadilla.
  • Place the quesadillas on the prepared baking sheet and bake until the cheese has melted, about 8-10 minutes.
